samui寒い (さむい, samui) — cold — is an い-adjective: 寒かった (past), 寒くない (negative), 寒くて (te-form), 寒いです (polite).

Drop the final い, then add the ending.
Every form is built on the stem 寒. The one that isn't: the polite present, which is the whole word plus です.
